Chilled Soups That Are Perfect for Summer

It is too hot to cook, and soup seems like such winter fare. But there are some cool, summertime soups that are easy to make and can cool you down. So, with the warm weather here for a few more weeks, don't head towards your stove. Instead, bring out your blender or food processor and some fresh produce to make cool, delicious soups in a snap.

Gazpacho
In a food processor, combine one slice of bread that has been chopped into cubes, a 28-ounce can of tomatoes, one small chopped red onion, half of a peeled, seeded cucumber, one roasted red pepper, two chopped celery stalks, two teaspoons of Worchestershire sauce, two teaspoons hot sauce, and salt to taste. Pulse the food processor until it reaches a smooth consistency. Serve this soup cool garnished with fresh chopped cilantro.

Vichyssoise

In a large stock pot, melt one tablespoon butter over low heat. Add three leeks, using the bulb only, which have been sliced into rings. Cook for ten minutes. Then add one sliced onion, five peeled and thinly sliced potatoes, and salt and pepper to taste. Flavor with 1/4 teaspoon dried thyme, 1/2 teaspoon dried marjoram, and one bay leaf. Add five cups of chicken broth and cook for 30 minutes or until the potatoes are soft. Let cool and then pour into a blender. Puree until smooth. Just before serving, stir in 1/4 cup heavy cream.

Avocado Soup

In a blender or food processor, puree two peeled, pitted, and diced avocados. In a small sauté pan, cook one tablespoon chopped shallots until tender; then set aside to cool. In a large bowl, whisk the pureed avocado, two cups chicken broth, one cup heavy cream, and the shallots until smooth. Add salt and pepper to taste along with 1/4 teaspoon ground nutmeg. Chill before serving and garnish with fresh chopped tomatoes.

Mango Cream Soup

In a blender or food processor, puree two peeled, seeded, and cubed mangoes, 1/4 cup sugar, the juice and zest from one lemon, and 1-1/2 cups of half-and-half. Blend until smooth. Chill before serving.
